Why choose a Beauclaire Outdoor Cooking System?

As the outdoor cooking season approaches you might be thinking about buying a Beauclaire Outdoor Cooking System. The following is a collection of facts about the Beauclaire and a few cooking hints.

The ‘promise’ of the Beauclaire is: thanks to the design of the flame pattern combined with the use of CAST griddles, the cooking surface area temperature is virtually identical wherever the food is placed on the griddle.

As the griddles are cast (as opposed to pressed) aluminium or iron, they are thick, so as well as the heat spread, the heat retention is excellent  -  with the result that usually you need only a low flame for cooking.
The ‘non-stick’ aluminium, although as thick as its cast iron equivalent, is less than half the weight (3.2kg)

The double-sided design: one side about 70% smooth/30% ridged, the other side about 70% ridged/30% smooth, allows for flexibility in the combination of foods cooked simultaneously. Although nothing is laid down in stone, the mainly smooth side is usually used for fish, pancakes, snacks, large omelettes etc with tomatoes, onions, mushrooms…on the ridged section; and the mainly ridged side is used for meats, and griddled vegetables, with the smaller smooth section for eggs, drop scones etc.

Snacks can include cheese toasted sandwich (smooth or ridged area): 2 slices bread, one side buttered, placed down, decent thickness slice of cheese/ham/whatever, second slice buttered, up. Flip when first side ready, and cheese is starting to ooze out.

Using the Oven Dome

-This is used for anything from just keeping off a cool wind, to a full roast.

For roasting, a chicken is probably the best, but entirely up to the chef. Roasting bags avoid mess. Always roast in a dish, never directly onto the griddle, and preferably in a roasting tin, ie just like in the oven.

-For pizzas, depending on the pizza size, any tray up to 36cm dia is fine. Preferably place the tray on a wire grill sitting on the griddle (either side) minimum 1cm off the grid
